What is Spelt?...
Spelt flour contains 15-21% protein which is much higher than wheat. It's also higher than wheat in complex carbohydrates, iron, potassium, and the B Vitamins, but lower in overall carbohydrates, which makes for much healthier cooking and baking. This ancient grain has been around for thousands of years and has not been genetically altered. Spelt is just another example of what great nutrition should taste like.

Spelt has been around for thousands of years. Europeans use this grain as much as we use wheat. They have always known that this grain is so much more healthier than wheat and that it is so much more moist and flavorful! You can even find spelt in the Bible!
Ezekiel 4:9
"Take your wheat and barley, beans and lentils, millet and spelt; put them in a storage jar and use them to make bread for yourself."
